Almond Cookies

*I Highly, highly recommend using mini-muffin trays for this recipe, they do not come out like "cookies". (The ones I link you to are very expensive. I think I got mine for like $5 at like big lots or hobby lobby or something; they are just an example of what I am talking about....Oh, oh, I know, have you ever had those remarkably delicious brownies bites from the grocery store?? That's what I'm talking about. I feel bad for you if you haven't!!!)

Almond Flour Cookies


1 1/4 cup Almond Flour (meal, whatevs)
1/2 cup Maple Sugar Flakes
1/4 cup Butter, Room Temperature
1 Egg
1 tbsp Vanilla
1/4 tsp Baking Soda
Raspberries, Blueberries, or Chocolate Chips

1. In one bowl, stir together the almond flour, baking soda, and maple sugar flakes.

2. In another beat the egg and then add that, the butter, and the vanilla to the mix. Blend together. (The butter obviously wont be melted, it will just be soft, so use a fork, and smash it around, it will eventually blend well.)

3. Refrigerate the dough for at least an hour.

4. Preheat oven to 350* and grease your mini-muffin pan(s). (I guess if I didn't have mini-muffin trays, I would probably flatten the whole thing onto a smaller well-greased cookie sheet, like a crust.)

5. Put about 1 teaspoon and a half in each slot. Bake for about 5-8 minutes.

6. Immediately when you take them out, push a fruit or chocolate chip into the middle of each one.

5. Wait approximately 1 minute, and the gently spoon each one out. If you wait, they will stick, and won't come out neatly.

Tips:

-The only place I have been able to find maple sugar flakes is at whole foods. It comes in a container that you would expect parmesan cheese to come in, and I found it by the honey. You could probably experiment with sweeteners, but I haven't, so I have no wisdom to bestow upon you.
-The original recipe says to add 1 cup of the maple sugar flakes, but they were WAY too sweet for me. It also says to only refrigerate for a half hour, but that was not enough.
-Make sure you leave the butter out overnight before you use it. It needs to be pretty soft, and melting DOES NOT work!
-The raspberries are my favorite if I am being strict about my nutrition, but OBVIOUSLY the chocolate chips are the best.
-Try not to eat all of them in one sitting.
